Cacc’e Mmitte

It is a DOC wine (denomination attributed in 1975) whose production is allowed in the area between the slopes of the Dauno Apennines and in the territories of Lucera, Biccari, Troia.
Cacc’e Mmitte di Lucera is still today produced in the territory lucerino in full respect of tradition, but according to modern oenological technologies. In ancient times this wine was produced in the so-called millstones, typical southern farms equipped with tanks, owned by the landowner who made them available to farmers who requested them for the pressing of the grapes. This equipment could only be used on a busy day, at the end of which the winefarmer, having completed the wine-making operations, left the millstone available to another applicant who poured in his own grapes. From this procedure would derive the dialectal expression cacc’e mmitte, which translated means “pull and put”, and indicates precisely the putting in and taking away the must from the millstone. The blend is composed of 60% Nero di Troia, 30% Montepulciano, 10% Bombino. Our personal interpretation includes the use of Tonneau where the wine ages for 6 months with subsequent passage in the bottle for aging.Bright purplish ruby ​​color, with notes of black currant, blackberry, raspberry, hints of bush, licorice, plum, wild cherry, Mediterranean scrub, great freshness, precise tannic presence well supported by a long and lively persistence. Wine suitable to accompany typically well-structured Mediterranean dishes such as baked pasta with meat sauce and chicken entrails, Apulian pasta with meat sauce and vegetables, tasty legume soups. Among the main courses, it is well suited to a succulent grilled sausage, roasted white meats, pork and lamb in the oven or stewed, grilled red meats, spicy meats and aged sheep cheeses.  CACC’È MITTE DI LUCERA DOC
